You could go with a subtle grey or off-white glass splashback. You could also go for a tile in a similar colour. The subway tile is really popular at the moment and looks great with black cabinets!
Simple white or white with just a bit of gray. It doesn't matter what material (glass, ceramic, etc.) or shape of tile, but a solid or almost solid white backsplash will keep the room light and not compete with your countertop. Examples:
Doesn't the developer offer backsplash options to go with that countertop? If so, that's where I'd start assuming he's worked with a decorator who put them together.
If you have to find your own backsplash tiles, I'd check out thetilestore.com to help you narrow down your choices to a few that suit you. From there you can get samples to see how they look with the countertop. The problem I foresee in you having to go out and find your own backsplash ideas is that the whites [assuming you go with something with white in it] will clash. I would ask for a sample of the engineered stone so you can see how they look together. When we redid own countertop and backsplash, we bought a square of the tile to make sure we liked it, and that it worked with our countertop. You see a lot of posts where they picked some stuff out, and it doesn't work.
