You can put almost anything with white providing you get your warm/cool tones right. Be guided by the white that you've picked for your cabinets and bench top - look at warmer toned colours for a warm white, cooler tones will work with cool whites.
I would use a timber splash back like spotted gum with a two pac finish. Dark timber over a white kitchen looks really good. Floor could be timber as well or vinyl planking, floating floor etc.
I never would have thought of using timber for a splash back. Great way to warm up the look! Would there be regulation concerns though? ie. if put behind cook top.
There is no specific regulation but it would not be recommended behind a gas cook top. If there is a concern you could install the timber behind a glass splash back for protection. There is also a really nice tile that looks exactly like timber as another option.
