Kitchen Cabinets

I posted this once but think I lost it so here goes again!
I would appreciate any views as I'm really struggling to make a decision ...
We are replacing our kitchen to a handless one with square edges and new appliances inc. induction cooktop, integrated dishwasher & 2 ovens side by side. We are using Melamine as we have been told it's more robust & doesn't peel. We are using brown stone for bench-top. We are keeping the same galley layout and adding a full height window at the dining end. I am struggling with 3 things:
1) what colour units. I'm not a fan of white but need a colour that doesn't make the timber floor look too orange. Should I go for one or two colours?
2) is Melamine OK? I'm worried about the edge...
3) we like black undermount sinks but I heard the stone can chip around the sink (we have a careless teenager) or should we go for a stainless steel over mount but with a flush edge?
Any help would be greatly appreciated
Thank you very much :)
