You don't need to match the colour to the floors at all. Some timbers look better next to each other than others though so you should still be careful. We went to a flooring shop and looked at different timbers near each other to decide on our two (rather different coloured) timbers. No photo yet because it isn't fully installed but here is an example:

Good idea. My other issue is that I dont want to change the other benches near the walls, so the timber has to blend in with them too.

Jen is right. Woods have undertones just like colours do. Some are warm, like walnut stain, some cool. Jarrah and "walnut" stain can't go together, but pine and "walnut " do, because of the yellow undertone.

I don't know all the woods. I've used a lot of pine because its quick growing . I have other woods in furniture. Some of the pros are experts on timber. Then there is google. Just pick sustainable timbers.

We would recommend using the same timber as the floor if you can. This would make sense and keep your material palette as simple as possible - there are some fantastic timber finishing treatments available that will provide a durable surface that is easy to maintain. There may be a way that you can introduce a separate timber element say 40-60 thick that sits on top of the existing solid top... perhaps a bit like the kitchen in this image by 'Beef Architects'

I like the idea of adding a timber extension as mentioned a few times in the other comments. If you do go for timber make sure you seal it. We ended up sealing ours with a floor sealant as we had problems with stains, especially around the sink area.
