Congratulations on your new home! I personally favour an all-white interior, but I think it will also depend upon what you plan on doing with the ... colourful carpets. I'm not sure how they'd all look with white walls as they'd really be attention grabbers! I'd potentially start by painting the ceilings white - I personally, particularly don't like the darker ceilings in the bedrooms and blue hallway. I'd also potentially consider picking two or three of your favourite colours from the house (e.g. the hallway blue and bedroom green) and using fewer colours, but consistently throughout the house (instead of every room being a different colour). You could do all living areas in colour X and all bedrooms in colour Y. Good luck!

What Dr Retro says above. The short answer is it would be rare to use the same paint throughout as you’re dealing with a number of different surfaces & end uses. Paints are designed for each specific application. Ceilings: use matt ceiling white, or if you want a coloured ceiling, tinted ceiling white. If you‘re doing a ceiling feature a satin finish could be used as long as the ceiling’s in good condition. If the ceiling’s in average condition some professional painters use an oil based undercoat instead of water based ceiling white. Walls: use water based satin finish, some brands call it low sheen. Walls in wet areas: depends how good your ventilation systems are in these rooms, sometimes worthwhile to use the lowest level of gloss paint (water based semi gloss) but as Dr Retro said above the higher the level of gloss the better condition your walls need to be in. If you have areas of new plasterwork, or cracks & holes that have been filled, apply a sealer binder over these areas before top coats, or the plaster patching will show through your top coats as it takes up the paint differently from the non plastered surfaces. On new woodwork use an undercoat then your preferred gloss level ie. semi gloss, gloss, or high gloss only where the surfaces are perfect (very rare). Some paints are promoted as primer/undercoat/topcoat all in one. I’ve found the finish is better using undercoat, then top coat, but that’s my personal preference. On existing/already painted woodwork: use undercoat on any filling/patching, then same topcoats as for new woodwork. If the existing colour is dark & you’re going to a light colour undercoat is recommended, or many top coats will be required to cover the dark original colour. Bare wood with a high tannin content is best sealed to avoid tannins bleeding through to your topcoats.

I’d suggest using pieces of plaster, painted in your chosen colours, to see what the colours look like in different rooms and at different times of the day. We were always going for Natural White which ended up having a pink tinge in certain light in our home. Our large back area is east facing (8m of glass stacking doors) with two south facing windows and two large skylights for northern light. Our colour consultant suggested Dulux Snowy Mountains Qtr strength and it is great for our home. Not stark (no blue/grey tinge) but definitely not too warm. We went all the same colour - walls, trims, ceilings - just in different finishes. Modern home with squareset ceilings. White is so hard. Good luck with your choice!

I favour stone against cedar wood tones. It's a cool neutral and usually contrasts with the warmth of the cedar beautifully. It also creates a neutral backdrop against which you can accessorise and change to your hearts content without needing to repaint. Here's some idea's from Taubmans site.... https://www.taubmans.com.au/homeowners/colours/colour-trends I would probably go platinum or pebble half. Although those colours look heavily pigmented on a chart, against the richness of cedar they would appear very pale but not as stark as a white. It's also quite period correct and easy to live with.
