Wood panelling: What would you do?

I am looking to purchase a late 1960s house to live in and love the structure and general look of the place, but my concern is just how much of the same colour wood there is once you combine the floors, walls and ceiling.

The matching furniture will go, which should help, but I'd love your suggestions for what you would do if it was your place, especially around:
- whether to stain or paint some of the wood
- can any of it be removed / replaced cheaply, and if so, would you do so?
- suggested colour schemes for furniture, rugs & curtains, taking into account the wood and brick

Would love to see any photos of similar updates that retain some of the original feel of the house, while modernising the look.
