kitchen splash back ideas

We are partway through updating our kitchen and have reached another sticky decision point - choosing the right splash back.

We acquired this kitchen from a house about to be demolished, and are installing it in a new location from our existing kitchen.

Kitchen cupboards are light yellow colour
Following advice from an interior designer we have put in large format cool grey floor tiles, flat grey bench tops (laminate), and painted the brick wall above the splash back a darker grey colour - dulux bushland grey. We are not sold on the wall colour yet.
Windows are dulux monument black - but thinking of changing to a silver colour. Appliances all ss.

So we thought of moving away from the grey for the splashback and including some interest and some colour likely in the blue scheme, but unsure yet whether to tile or have a flat surface. And if we do tile, what design to go for?

The other main criteria Is it needs to be something that doesn't show marks/ handprints/grime because we aren't fastidious about cleaning.

With all this in mind, it would be great to hear people's opinions and ideas for a suitable, stylish and practical splash back
