Hello Northstar 1 thing to remember when choosing your lights .If you want the light down choose a down facing lampholder, dont drop them to low as the GLARE from the globes in your eyes every time they are on is annoying as, every lit pendant you showed had an incandescent globe so if your going to use Fluro globes they will look worse.LED globes with a cleeear glass would be best. Avoid carbon filament even though they look great its a low light output. Depending on your budget take a look at Mondoluce on line they have some amazing glass pendants from Italy and in multiple sizes.

I agree that the existing pendants are very generic, inoffensive and safe. If the budget doesn't stretch to replacing five pendants then get an electrician to shorten the cables so that they are above your head height. You may also like to explore some other bulbs. It looks like the bulbs over the dining table may be a warm white, whereas the kitchen is a cool white. Once you have found the perfect bulb for colour and brightness/intensity then match all five pendants with the same bulb. I think you're right, you'll have to move the light if you want to put in a fan. Why do you think you need the fan? There might be another option.
