1980’s ‘spanish’ house needs 2010’s update

Hi team,
We have just brought our new home which is a ‘Spanish’ style U shaped house. We have a massive dark brown wall and chimney in one of the living rooms which backs onto the kitchen and divides the space making it all a bit closed off.
We are trying to work out whether to knock the wall and chimney out (that’s going to result in ALOT of bricks or what to do.
I have no idea whether to engage a builder or architect or interior designer to help us work out a floor plan that works as there is also a ‘dining room’ ‘laundry and powder room’ ‘office’ and second living room involved.
We are all about open plan living but this home is seperate rooms which is not working for us.
I have read a few articles on here but there is a lot of conflicting pieces of advice so I am still confused.
We are in Brisbane so want to make sure we get someone who understands the climate and what we want from a design perspective as in our opinion it all ties in together.
Any help would be fabulous!
