Refurbishing an old fireplace - how to repair/finish surfaces

Hi I'm refurbishing this fireplace ahead of installing a flued gas heater in the same place. The reason for not installing a new wood stove is cost atm - around $2500 to get scaffolding up to sort out the chimney, plus another $1000 or so for installation costs. So flued gas it is for now. It's had a wood stove for the last 20 years and the heat from this has charred the timber surround and caused a lot of the render to break off. It's a 1927 California Bungalow with handmade bricks and lime mortar.
So this is a practical question - how should I finish the sides of the fireplace? Can I render with lime mortar, or should I use a ready made render mix? Shall I use a black mastic such as sikaflex to tidy up the voids around that shonky sheet metal work, or perhaps patch over that cut edge with bitumen patching? I'll tile the base to tidy it up, with lime mortar.
