Paint or stain original sash windows?

I’ve just purchased an 1871 home in Launceston. My handyman says the window frames and doors are the original cedar from when the house was first constructed The three rather heavy wooden fireplace mantles are also bare timber as are the skirting boards. It feels like a lot of timber.

I want to renovate the house in a way that gives it a modern look while respecting the period features. Most renovations I’ve seen paint these features white. Even though the timber window frames and skirting boards seems a bit heavy, I’m loathe to put white paint on beautiful old wood.

Does anyone have suggestions or, even better, photos of renovations in which window frames are just stained rather than painted (I’m much less fussed about the skirting boards). Any thoughts/advice is much appreciated!
