Options available to achieve full height door look

We are currently renovating and were wanting to put a full height cavity sliding door on each side of our kitchen (2700mm roof). The idea originally was that the tract would sit flush in the roof.


Unfortunately, the plaster is attached directly to the roof trusses and as such, we don't have the required 30mm space in the roof for the track to sit.


What other options available to achieve a nice look?


I know when can lower the plaster board with batons, but that would require the whole house to be changed so we don't want to go this path.


1 option is to add a bulk head to the kitchen area, however, we were trying to get away from this as we wanted full height cabinets.


I couldn't find many images on Houzz or Pinterest, but I am trying to see what it would look like if their was a cover of some sort to cover the track, or if there is a nice looking pelmet to cover the track.


I guess at worse, we will just not make it full height which would be unfortunate
