I live in a 300 year old cottage and have beams on the walls and beamed vaulted ceiling. If I want to paint the room do I paint the ceiling the same colour as the walls.
300 years old? Either a typo or you aren't living in Australia - this is the Australian Houzz site. If timber has survived 300 years without painting then you would be a vandal to paint it.

with all that beautiful old timber I would paint all walls and ceilings white so that the natural beauty of the timber shines
I would not be painting 300 year old timber!
I don’t want to paint the beams I want to paint in between them but as my walls are beamed and the ceiling is vaulted I don’t know whether the whole room has to be painted the same colour or I can paint the ceiling one colour and do the walls in another.
