We will need measurements to assist with layout options. Also an indication of budget.
Would you move plumbing and range hood? These add to costs. Do you want a pull out range or keep the hood?
What do you want. An island with breakfast stools?

I have measured the kitchen as requested, please refer to my terrible drawing.
As far as budget, I don’t have an exact one in mind just yet, I’m thinking 10-20k, although my husband won’t agree haha.
I hate the range hood and don’t use it, so I would love that removed. I’m happy to pay extra for plumbing etc if the layout requires moving around. I’m open to most ideas really. I want more cupboard and bench space if possible and loads more outlets as I use kitchen gadgets a plenty.

Is the length of your kitchen 2.26m or 2.76m?
Where does the walkway go next to the stove? Can that be blocked off?

The length of the kitchen is 2.76m.
The back wall where the fridge is located is not a flat wall. It dips in to allow for the fridge and comes back out for the corner counter if that makes sense. So the 2.26m is measured wall to fridge.

There is two entries to the kitchen (hallway to front door and dining room). The dining room could be blocked off potentially but I worry that would ruin the flow of the house.

This is what’s beyond the kitchen

Your kitchen is a compact area, with two entry's/exit. This makes the kitchen a thoroughfare, taking up valuable space.
My suggestion is to loose the hallway entry, and replace with a pantry/appliance cupboard, since you said, you use lots of appliances, and your photo with everything over the bench, seems as though you need designated space for theses appliances. Fridge, and bench on the back wall, with a underbench oven and stove top, with bench space either side.
Removing existing stove top,and part of sink bench, so the path to the dining room is to the side of the kitchen, and not through the middle.
I have attached a rough sketch, measurements need confirming, and an example photo of a pantry/appliance cupboard.

I always think of how I'm going to use a room first. Most women seem to complain one of the worst chores is getting the groceries from the car to the kitchen and putting them away. For this reason, to me access to the kitchen should keep this in mind so when your entry is right near the hall doorway, that is the door I would keep. A small kitchen can be very difficult when entertaining and people want to help. I solved this in my old home by putting a hatch between the kitchen and dining room allowing extra cupboard space to fill the doorway and giving extra bench space too. Wall cupboards can also be put above the hatch. This means when dinner is being served or cleared, you have helpers clearing to the bench and others in the kitchen moving to or from the hatch. You don't have a large enough kitchen for many helpers, but I found this system worked a treat, with 2 people working each side things moved quickly and efficiently with helpers not falling over each other.

Amanda, we had a similar U shape kitchen with an imposing bench and bib dividing the room. The pics below show how we opened it up and significantly improved functionality, storage and flow. I hope they help .. and don't bore those who've seen them before :-) Replacing the bench with an island worked wonders. Reducing the size of the window allowed for extra overheads and streamlined the design. The reduction in light coming in during daylight hours has been insignificant.

The difference is your two entry points. We only have one. Are you able to provide a floor plan, or a sketch showing the layout of the broader area? Would you consider opening up the kitchen and dining? There's some very talented people on Houzz (like oklouise and olldroo - to name just two), who come up with some brilliant solutions when they can see the bigger picture.
