Poolside tropical plant suggestions

I recently got a cute little plunge pool installed and have been a bit stuck on the garden bed?
Bed is approx 800 off the fence to pool, I basically want it to be a wall of tropical plants in time but to start with I want to fill the middle bit where it's bare with a med-large screening plant. (Prefer around 3-4m high)
Am thinking a clumping palm that I can manage the stalks of if that's possible - (Macarthur or Bamboo Palm "Florida"?)
Or a ginger like Alpinia "Giant Pink".
Or hit me with your suggestions!!
I really don't love the Tiger Grass, they always look thirsty and I've cut 2 stragglingones back, I'm hoping once soil is to improved they'll look better - BUT if the new plant wants to do its thing and spread that is fine by me because I'll rip those suckers out !
Also along the pool edge I want to put a "Little Ruby" hedge, I can't find any info on whether it tolerates salt / magnesium water though?
