Low Tox Timber Batten Finish

Hi,
We have just put some feature tassie oak battens in our bedroom wall and am after a finish that is low toxic, low VOC as I am pregnant and sensitive to chemicals.
Our builder just put an oil based oil on the ones he finished in our study and the smell is really bad, he said we shouldn't go in there for a couple of days.
So for our bedroom any recommendations so we can sleep in there without any smells? Would a water based varnish be better like Cabot's Water Based Matt Cabothane Clear Polyurethane Varnish? Or I was recommended Interbuild Clear Hardwax Oil at Bunnings with No VOCs. Any experience?
