Beveled or Pencil Round Edges on Kitchen Waterfall

Hi There,
We're having a new kitchen installed and have decided to give Stone Ambassador - Dapple White a shot. I can't find many reviews, but from what I've found its made in china.
We were going to go with 40mm with beveled edges, but the stone mason made a comment about there being too many bevels etc, and it looking too busy. He suggested we'd be better going with a pencil round edge.
From an architectural/design perspective, would there be any rules or trends etc to abide by when choosing edge finishes?
Our island bench is 2400 long and 1000 wide and the kitchen fronts are IKEA MAXIMERA (White).
Any thoughts on the matter would be greatly appreciated.
