Attic/Loft conversion

We are planning a large renovation. It will include a small extension (pushing whole back wall of house out ~3m, already a small 1970s-ish extension) and also going up into roof space for a master suite (bedroom, robe, ensuite, possibly study nook). The original part of the house was built ~1917 and has a pitched colorbond roof (I think ~30-35deg).
My queries: a) is a roof conversion a terrible idea on the Perth climate? Ie pretty warm summers.
b) I've had a couple of very initial conversations with builders (just over email/phone, not on site yet) and whenever I mention roof conversion their response is always worded as a two storey extension. We don't actually want the roofline to look different from the street view. Are build costs going to be similar if its a whole additional storey (mainly over new extension) compared to extending roof line and having loft/roof space rooms above both old and new?
