staining on burnished concrete

We chose burnished concrete for our new build. Partly due to the builder’s enthusiasm for the product, the idea it would be hardwearing and low maintenance and cost point. The kitchen is a nightmare! A water based penetrating sealer was used. With the marketing saying spills that are wiped up straight away won’t get a chance to stain. There are marks all over the floor from spills wiped up immediately. Last night a glass of wine was knocked off the bench. It’s was wiped up immediately with a clean cloth and water then again with an Enjo mop and water. Splotches remain. We’ve been told to only use water to clean. Other cleaning products will destroy the sealer. In previous homes we’ve had Jarrah floors, sealed quary tiles and terracotta tiles. None have been so high Maintence. Should I get it resealed with a solvent penetrating sealer? Will this solve the problem?
