The "Birch Trees" design sounds very interesting, specially if you install it behind the range hood vent and all the way up to meet the ceiling. Any way we can see a bigger sample? Is it a printed detail on glass? or and embossed glass detail?? You already have a "Wood Look" on the floor, visually communicating wood by way of branches would only reinforce the design. I would however consider an oiled bronze, or dark iron color/look (match hardware hinges/drawer pulls) as "Trim" between the subway tile and the "Branches" tiles. Also if the Birch design is printed on glass you will want to carefully consider what type of backing/adhesive you install it with as it will show through the glass.

Thank you everyone one for your ideas. I was thinking something like in this pic attached. A dark grey bench and subway tiled backsplash. I originally wanted a herringbone pattern with the tiles, but thought it might make the back splash lip of the ss sink look odd. I was thinking black handles as well. Plus we are getting a new cooker.

Thanks Kate, mine is more a kitchenette in a 1930's garage conversion - chrome tapware, red bricks, black cabinets and bamboo benchtop, high ceilings with exposed beams. It has a similar vibe to my fantasy kitchen but on a micro scale. The bricks are beautiful, with some kind of varnish on them already but they are super irregelur and bumpy. I love the idea of a hinged lid over the stove top, which wouldn't detract from the seamlessness of the bricks as I feel a glass panel would. Glass gives off that blueish tinge and would interrupt the flow.
