I am leaning towards your design and using the corner as appliance/pantry. The bifold from bench height up would certainly work really well functionally but I’m not sure I’d like the look. I’ve sketched up having the area 800 deep to house the fridge and to have a step in pantry/appliance cupboard (500 deep bench, 300 step in cavity). 2 variations of the cupboard, first with sliding doors opening from centre (approx 1m opening so might feel a bit pokey), or second with perhaps stacker doors to right or bifold (this would block off bench space between pantry and sink when open though). This cupboard would be pretty big (2280mm) so don’t think we’d need the appliance cupboard next to dining area. And could have oven under cooktop. Dining and kitchen could be separated by small wall.

Note - This is what I think of the concept in general. It's not a criticism again the OP - I think Butler's pantries are better idea's in concept than practice. I've not understood the rationale for a kitchen thats separate to your kitchen, unless of course you are prepping all your meals in there in which case what is the kitchen for? I think it's a sign of the times that we have more space and more money than we know what to do with when we start installing two kitchens in the same space. Of course I understand the rationale for a pantry. A place to store food items that may not be used frequently and the same for appliances. In the days when food was only available in season and the only way to preserve certain foods was to pickle and bottle it then a large space to store those supplies was necessary. We live in the modern age now where any food can be gotten easily and cheaply all year round. So these spaces are housing mostly appliances that we rarely use. And if we rarely use them you have to ask yourself why you are holding onto them?

keep in mind that my plan has single external walls and all the inside and outside walls are 10cm thick to make drawing easier and the depth of the verandahs includes the eaves, adding a brick veneer would use more space and given the choice it would be lovely to plan for a covered walkway and raked ceilings in the living areas and this is a very basic gable roof but there are lots of more exciting/expensive roof options to consider

Melt in ACT your Mum's pantry sounds fabulous and love the level of detail she has gone to to get it right for HER! As to the Arslan: 1.1 x 2 m sounds very generous. I think one thing that always helps any space is not to have dead corners. Where you have bench and a return of bench that creates a corner you cannot get into. At 1.1 - 600mm = 500mm of walk space just into the ends is a stretch for items you may not use often. Depending on the doors you use you might have access to most of the 2 meters long and that is fantastic. If it is the other way 2m of 400mm shelves all down one side with 700 to shuffle down to the far end, that is just ok if your not too um enjoying of the meals and cakes and biscuits etc...if you get my meaning!! You would have to shuffle out to change your mind! Plan would assist here: I hope I have interpreted your meaning well and the see ideas are useful. Cheers Margot
