I’d match to the trim colour. It’s the less likely to change over the life of the blind. Many online suppliers will send you through samples to test the colours.
Definitely white for a blind to match your trim colour if you are wanting curtains as well. If just doing a blind then a patterned blind could work. If adding curtains then go for something neutral, like white shears or a natural linen, then if you want more colour in the room, you can add it in things like cushions and artwork that are easy to change if you want a different look.
