Kitchen layout help needed - thank you!

Hello! My in-laws have asked for my feedback on a complete kitchen redesign they are doing. The project has lots of constraints - support posts, awkward walls, size. Anyway I would love your ideas and guidance. I have attached two pictures - one is the image of the design they have been given. The other (with colourful squares) is what I have suggested. But it still isn't right (and I think they are keen on option 1 anyway), and I'm not sure which option is better. Can some of you masterminds please give me some ideas to make either Option better? Note: Its a holiday house, we do not need a huge pantry, but we do need a spot for a coffee machine, microwave, kettle, toaster, and for dumping random things (keys, phones). Thanks

Some of my notes about my concerns with each option:

Option 1:

not sure about pantry (too big for us) and takes up so much space

not sure about how to manage mess around sink

nowhere for coffee machine, microwave, toaster etc

don't want to just end up dumping everything on island

distance between stove and sink - too far?

concerned kitchen will become a thoroughfare

Option 2:

size /shape of square island is awkward (thanks for your feedback Kate, I've added this in here now)

appliance nook is in very busy corner (pantry, stove)
