I love our outdoor room, but my favorite idea for a screened porch is security-screened utility porch off the laundry. Provides space for a mini-clothes line for hanging delicates or drying in wet weather.. I hang out old clothes dryer on the wall on the porch where the exhaust isn't an issue. And it's good for kicking off dirty shoes or hats and storing a few outdoor cleaning and gardening tools. If large enough, it can also incorporate an outdoor sink for messy jobs and potting etc.
I should add that for me, fly screening all around is essential. The photos show lovely open spaces but the insects would drive me nuts. We have the best of both worlds I think, with a fully screened room on one side and open terrace on the other. And we pretty much live in our outdoor spaces. We don't have dining space inside at all for guests - only a tiny area for our casual meals. If we entertain, we eat in the outdoor space. It's designed to be quite weatherproof and if it's cold (which it rarely is), we put an outdoor gas heater near the dining area. Big bamboo fan over the table helps circulate the air on hot days.
