Since the two open shelves worked well for you for five years, I would rebuild them instead of adding two large upper cabinets simply because the wall is open now.

The black window and Urban Bronze shiplap already give the sink wall a strong focal point. Large cabinets on both sides could make the window feel boxed in, while substantial wood shelves would keep the wall balanced and preserve the lighter appearance you previously enjoyed.

I would repeat a wood tone from the coffee bar and use a durable, washable finish on the shiplap, especially around the sink and countertop.
