Fridge or Pantry? Eggs

The inevitable household debates over fridge vs pantry continue this week with essential ingredient; eggs.

Many chefs stand by keeping eggs on the counter. But that may not be practical for you. You also may just find it odd!

Call me crazy, but my general dislike for getting food poisoning steers me towards the refrigerator !

I remember my grandparents keeping eggs from the farm on the counter since they used them quickly and the eggs were straight from the hen. With the shipping time and shelf time at the grocery, I feel better keeping mine in the fridge. Funny how hard I'm finding to choose one or the other in recent polls. :D

I keep all spreads in a plastic tub next to the toaster even the butter is next to the toaster in a butter dish, I found myself way too frustrated walking individual spreads to the fridge all day long. I thought there has to be a better way. So far the only things that spoil are home made marmalade, although that could be because no one else in the house eats marmalade and it sits there forever

I agree with Janet – chilling uncooked potatoes does them no favours at all plus they often turn a rather unappetising dirty grey colour which means that you will tend to keep them in the fridge for a few days and then throw them out anyway! If you have an extra prepared potato (ie one that has been peeled and/or cut) don't let it sit around chilled or unchilled – cook it anyway with the rest of the spuds and then you can keep the cooked (boiled, roasted, mashed, whatever) potato to use in any number of ways for tomorrow's breakfast or lunch or as a snack (potato salad, potato cakes, potato gratin... ) or even (if you have an odd aversion to using up left-overs) chop it into the dog's dinner or the chooks' scraps...

Thanks Kate. Okay I can make that work w the pantry. So with that in mind, with the hinges on the correct side, you don’t think the fridge on the northern wall facing south will feel too cramped? It will come out 300mm more than if the pantry was there. But the win would be that the practicality and flow of the kitchen is there despite it coming out further.

Always the refrigerator for us. If we went through a dozen a day, I'd probably leave them on the bench for a few hours, but not beyond that.

I find it very upsetting that in the UK they put egg holders in your fridge yet they are kept non refrigerated in supermarkets. No idea what the right answer is!

I keep in fridge, but let come to room temp if making a pavlova or anything that requires whipped egg whites or beaten whole eggs.

What ever you feel comfortable with. For years people have been storing eggs in a larder/pantry and providing you choose good quality eggs from reputable sources it should be perfectly ok to store eggs at room temperature. In fact many chefs support this as the eggs perform better in cooking when kept out of the fridge.

A few years ago test was done on Lion-branded eggs. Two batches of eggs were kept for a fortnight, one at room temperature, the other at typical fridge temperature. Samples from both batches were regularly tested for a wide range of bacteria including E.coli, salmonella and listeria and there was no difference between the two batches. Both remained bacteria-free.

In the fridge, they last longer but don't put them in the egg holders as they are usually in the door and that is not the best part of the fridge to store eggs. If they were fresh from the chook and you use them a lot they are good on the bench. Better for cooking if they are room temperature. On the farm we always kept them on the bench as they we used everyday and not enough room in the old kero fridge.

depends on the climate... most of australia is pretty hot so the fridge would be better, also by the time you get the eggs at a supermarket they are quite old already. by contrast if you live somewhere cool then the bench is fine, and if you have your own fresh eggs and chooks they will be fine on the bench. On another note, egg whites that are chilled will whisk better and become more firm and stiff.

Shop bought always in the fridge. Fresh laid chook eggs now are on the bench in plain sight so they don't get forgotten. Each day I think up different ways to keep up with the supply and when I get behind I give them to friends and family. I write the date and number on each egg and use them in order so its always the oldest egg is used first.
