kitchen oak cabinets

I have an oak kitchen, probably from the '70s/80s. It's not in great condition. The finish is patchy, and at worst an orangey yellow. The wood is solid. I'd love to refinish it to a pale oak. In places the finish has worn away and it looks exactly the way I'd like it all to look. I don't think the wood has been stained, just urethaned. If I remove the finish what should I do with the bare oak to keep it pale and matt? The countertop is light tan, very neutral, the floor tan. What colour should I paint the walls to go with pale oak? I don't like grey or greige. I'd like to add some colour but it's not a big room so I don't want a lot of contrast. I have colourful artwork. The room faces west. Any advice gratefully received!
