In the early stages, you can simply hop up into the roof and see which walls are load bearing ie have structure sitting on them. Then you need a professional to assess it depending on what you want to do.
I don't remove any walls unless my engineer and I have inspected it together and understand the consequences for loads on and to the surrounding structure.
It is not always the load over a wall that affects the structure but eg a corner that gives it rigidity over long lengths or how stable the eg mortar is.
