Different states seem to do different things. In Victoria there tends to be a substrate used under the stone. Other states seem to put the stone straight into the cabinetry. I would be checking the manufacturer’s installation instructions for your stone and comparing those to your installation. Don’t dance on the bench in the meantime.
I’m in Perth, and have never seen a gap between cabinet and bench top like that, we don’t tend to use substrates here. I DO NOT think it is correct. Any load on the bench, may crack the bench top because it is not sitting flush on cabinets for support. I have attached a photo of the underside of my cabinets. I have checked all the cabinets and bench, they are all sitting flush, no gap.
I'am in NSW, to me it wouldn't matter what state you are in Australia you need to call them back and have them fix it. What is supporting it up against the wall.
The top should be supported on a frame all the along all the edges of your cabinetry. Your cabinet make or stonemason should advice how it is supported . The cabinets may not go up to meet the stone there may be support hidden we can’t see attached to back of cabinets. This is a photo under my sink but you should get the idea.
