Depending on your budget and how much structural work you want to have done, you could keep most of it the same. But you would loose your meals room. extend your laundry to the door of the meals room, turn your laundry side ways this will give you access to the out side, on the other side of the laundry extend your wall pass the internal door of the meals room to create a walk in pantry, extend kitchen gallery to laundry and pantry, open up internal walls of kitchen to living room and dinning room creating a beautiful Island bench looking into living room. open up external dining room wall for sliding doors to bring the inside out. because there is a walk in pantry there would be no need for upper counters so u could also have a bar at the kitchen window on the outside. Doing it this way you would save a lot of money not having to move plumbing and electrical in the kitchen. You would have to walk through your kitchen to get to laundry though.

Have you considered taking away the cavity door beside the stairs and open a section of the wall opposite the stairs to create a 2 way open ended shelving with some down light for displaying purposes? A series of full height vertical blade screening beside the shelving can then help add visual depth in the living room and still define the living room. It will also help frame the tv cabinetry with the existing nib wall on the other side. You will have minimal issues with reducing structural integrity of a potential load bearing wall. The existing fireplace is too nice to remove or make alterations to as it nicely divides dining with the living room.

That's true, I thought afterwards that I shouldn't have put reading in there (just edited). The lounge area is more of a social space really. I'm concerned about people getting through that gap with the island seating but cooking is a huge part of our family life (the big kitchen island is a big reason for the renovation) and everyone that comes over sits at the kitchen bench to chat. I have an alternative plan that gives a bit more circulation space but it will involve more of an extension and I think a lot more $.
