I had the same dilemma and after many suggestions found that 90cm from the ground to the bottom of the tv was most recommended. It is a perfect height for our 60inch at both sitting level and standing.

I like the idea of a timber floating cabinet no wider than the TV, which could be purpose built and installed given the wall is brick. Unless you are handy and can do this yourself? I would match the timber to your floor, if possible. I say cabinet instead of shelves because you are wanting to hide the wiring, etc, and a cabinet will do that where a shelf will not. The raised platform you have for the fireplace is really attractive and a floating cabinet will not detract from it, I think.

Siri - you can have your Eiffel tower angel... give me the beach any day :) Nic - perhaps some driftwood, shells and a jar of sand might help bring the beach to you - just don't knock your sand flying or you'll literally be able to crank up your fireplace and lie down on your sand to sunbake lol.

As the fireplace has the bricks visible , I'm guessing it isn't actually used ? I'd be tempted to have the TV directly above the fireplace -- almost where the mirror is , but probably the top of the TV at the level of that frieze or whatever it is called , and angled downwards . The mirror I'd have where it is height-wise , but to the right on that same wall . And I'd leave that drinks trolley where it is , with nothing above it , or maybe a period wooden framed picture or photo above the drinks trolley .
