I love throwing a quick quinoa salad together with whatever is in the fridge. This one here is with red quinoa (steamed or boiled), roasted baby potatoes (skin on), red peppers, lightly roasted vine tomatoes, rocket leaves, baby spinach and my go-to salad dressing: The World's Easiest Vinaigrette. Three parts extra virgin olive oil, one part anything acidic (lemon juice, squeezed lime, apple cider vinegar or white wine), Himalayan pink salad and cracked pepper. Add any leftover chicken, lamb or beef and you've got a salad for any occasion. If you have time, add some baked salmon to it instead of meat. It's perfect for picnics or last minute meals for friends. Extra: Pomegranate or grilled pineapple make an excellent addition too.

Which one is that, Astrid? 1, 2, 3 or 4? Petal & I both liked 2 and 4 but the extent of glass (and the necessary cleaning) in 4 put Petal off, while the mortuary feel of all that stainless steel put me off. 2 doesn't really excite us either but it's the best of a questionable lot. ;-)

Hi Patricia, that sounds like one of those 'rules of thumb' that can't necessarily be relied upon. There are a lot of factors to consider when burying or partially burying a water tank including the hydrostatic pressure (if you have a high water table there is a change the tank could float right out of the hole when empty), soil pressure which could distort your tank etc. I guess the first question I would ask you is 'why a 30,000L tank?'. Are you diverting all of your downpipes? How much roof area to you have? There may be other space saving solutions that don't rely on you partially burying a tank. Yes, life goes on for me too, always something to do and a brisk walk always starts the day well and is warming too. Unfortunately we have just as many weeds that like to grow in winter as in summer, so the gardening never really stops but it is a great place to be on sunny days. Heavier work can also be done over winter before the heat of summer. I also like to catch up with friends for lunches in sheltered outdoor eating areas many cafes provide these days. On the really cold, wet days I like to take time out and indulge in my hobbies, winter is a great time to catch up with them and still feel productive.
