Hello there. I would definitely recommend the one on the right for 2 reasons. 1) The one on the left would be a nightmare to keep clean. Imagine trying to get in and around all the curly bits. 2) I don't think that a tap should be a big feature and call all the attention to it. It should blend into the surrounding space. I feel that Caesarstone and Quantam Quartz are comparable in terms of quality. In terms of colour, I prefer Alpine White. Snow seems too warm/cream for me. But it depends on your surrounds. Also check out Smartstone Nieve White, the colour of which I prefer to Snow and Alpine White. More white and less flecky

I think that your builder's quote seems fair and reasonable, and am surprised it is not actually more. You have an old house with old walls that are not straight or square, and you want to make it all perfect for your square set for your ceiling/wall junction? As mentioned above this is precision work, and needs a fair bit of preparation to get right. Why don't you research Edwardian plaster cornices to see if you like any of them and ask your builder to quote as an alternative to labour-intensive square-set, which has a more contemporary feel? As quotes for variations are not in competition with other builders who are quoting your builder doesn't need to be super-competitive.
