Laminex has Aquapanel which has been around for a while also. Have used it in a commercial project when employed at an aquatic centre and it wore very well. The only thing is back then the joining strips were as ugly as sin. Hope technology has progressed. A bathroom with no grout is my dream.

Do your research. Look at how they are joined in the corners and see if they will give you the look you are after.

The timber battens on their own will not block a lot of noise but if you were to do that you could line the wall behind them with a sound blanket. Real timber is slightly thicker than mdf so it does do a slightly better job. However sound travels through solids, you need something to break the transmission.
