There is probably vermiculite underneath, hence why they are low.

Visit your hardware store and get advice on grout sealer products. But ensure you tell them it is for floors, not walls. Mopping the floors will clean the tile surface, but not the grout. Use rugs or carpet on floors where there is a lot of walking traffic. Eg: hallways, kitchen, doorways. To clean grout use a mix of vinegar and baking soda, and a broom with a stocking over the end. Sprinkle baking soda on grout then spray vinegar, this will then bubble, rub grout with broom. With a brand new home, you should not have to do this until you notice the grout discoloured. Maybe bring in the rule, that your home is a shoe free, or sock only zone. The less times you clean the grout the better. Otherwise unsealed grout will start to deteriorate.
