Before you invest in travertine tiles you should also consider travertine-look porcelain tiles. They are available in larger format than traditional travertine and are more resiliant to a hard life in a kitchen. You may be surprsied at how realistic the travertine look porcelain tiles are once you start seeing them. Being a manufactured product there is less variation between tiles than you would have with a natural product, and they are much harder wearing.
