It not only that you seal the stone properly; You also need to make sure you are cleaning with PH Balanced neutral cleaners, that won't strip your sealer off. Also remember a sealer is meant to repel from staining, any thing that is acidic will eventually break down the sealer. As long as you wipe up spills and splatters you will be fine. The real issue is that your stone will patina, unlike granite a marble will scratch and show wear, but that is the beauty of marble and remember they have been using it in Europe for centuries. I wouldn't worry.
