I live in the country and am completely reliant on tank water. I also have a grey water recycling system and can tell how much water has gone through it at any one time as the filters need to be cleaned after so many litres of water go through them. I can almost guarantee that the bath with a couple of grand kids splashing about for twenty minutes having fun will use less water than any of their parents showering does. Even topping it up with more hot water if needed. Unless you are very conservative with your showers baths are not that bad and the value they add to the resale of the average home outweighs any downside. I definately wouldn't buy a house without one. I have had a house that has a bath the size of the shower though, about 1m x 1m by maybe 40cm deep and I think it was called a hip bath. My sister in law has one at her house, she got it from Lanark, as her house only had a shower which is not practical and it was the cheaper option than redoing the whole bathroom. I dont know if that is what you are after or not.

Looking at your lighting plan, it isn't not enough lights, it is where they are positioned. The three lights above island should be spaced directly above island for task lighting. Your plan has them across the kitchen, the same as other three in the middle of the kitchen. If you look at the photos that have been posted with pendant lights, they are all positioned over the island bench, not spread over ceiling. Hope your choice of lighting works well.

with tedious careful effort it could be possible to dismantle the old kitchen and rearrange the original (limewashed?) cabinets and existing appliances into a new floor plan with new counters...the best way to discover what's possible is to post a whole house plan plus more detailed plan of the whole room (kitchen and adjoining open areas) showing measurements of each wall and showing size and location of doors and windows and original position of stove and sink, then, ignoring the counters, measure the outside width of each separate cabinet module (eg 450 wide drawers, 1200 wide 2 door sink cabinet, 600 wide stacked oven and microwave cabinet etc) and post the details to invite suggestion for alternative arrangements ...depending on where you live there could be a local kitchen reno company that can do this for you or save money and do the work yourself with a new counter custom made to suit ...it's difficult to understand the dimensions from the photo but simply rotating the island might be enough to create a more open plan arrangement
