Use normal wood and then add a glass splashback over it. You can still see the wood and get that rustic effect, but it is safe and hygienic for a kitchen. Adding an LED strip light to show off the splashback is also a good idea.
Hi Nicole, not that I know but I'm sure there must some way out there to seal a wooden splashback just as you would a wooden floor... however, my guess is that just as you'd have to repolish a wooden floor after some time of wear and tear, the same would apply to a wooden splashback after constantly wiping it clean... in my opinion, a splashback should not only be hygienic (not ideal with wood being porous) but also easy to clean, and although I like Mynardito's idea above, it won't quite look or feel like wood (not to mention double the cost for the wood and for the glass)...
Anyway, what I'm getting at is, have you considered tiles?... tiles are commonly used and ideal for splashbacks as they are easy to maintain... and National Tiles have just brought out a new range of timber-look (& feel) tiles... I particularly like their 'Chalet' range in the 'Bianco' or 'Rovere' colours if you're after a natural wood look...
Pazz mentioned the timber tile, and what I'd also suggest. Unfortunately timber as a splash back is against regulation, as splash backs need to be fire rated, and this would make it fire fuel! Even as a substrate fire rated gy rock or fc is required behind even a glass splash back, so glass as a veneer over timber is still not ok. The timber tile is very realistic, it is applied as per plank, so you are able to achieve a real timber impression in application, aswell as tactile woodgrains for both a real and visual texture. As a ceramic, theyare completely impervious to moisture, and cost effective. If yosure hearts set on real timber, then address the direct area splash back requirements only, then clad the remaining area to suit your tastes. Minimum 150mm behind a water connection or discharge point, 650mm high behind gas cooktop,-700for electric, with 200mm either side of nearest burner hob, and the rest is up to you. Good luck.
