My dad built our huge rumpus room. He passed away unexpectedly at 39 leaving mum and us two kids. His army mates came and finished it. The built in cupboard doors were "army built" and so heavy we could barely open them to get our toys out. We had a train set that folded up on to the wall and a peg board and window seats. It was a lovely space with polished floor boards and we spent all but the cold winter months in there and even then crammed around with the electric radiator. Very few neighbours had a rumpus room so we were a bit special. Lovely memories.

We agree, a rug could help define and delineate the different spaces! It looks like you may need some specific and quite large sizes - look for rugs that can be ordered in custom sizes to take the stress out of trying to make stock rugs fit! You have an absolutely amazing artwork on the wall there - perhaps use these blues and golden tones as inspiration? Blues would looks great with the wooden cupboards and accents. We had a pole house with timber floors around the pole. The builder did a fantastic job and recessed the floor timbers slightly into the pole, so there was never gap. Furnishing around the poles can be interesting - indoor plants are great - but realistically, your focus will be on the outside views during the day, and it will only be nights that you will think about the poles/inside :) I would probably put a couch on the view side of the pole facing the views, with plants this side - and no-one will really notice the carpet.

Depending on money, I would move the kitchen to the rumpus room, make it L-shape, along back wall & laundry wall, There should be space for a decent sized island bench running north-south. The west wall could be windows, bi-folds, sliding doors etc. A pergola/undercover area would help with the sun & could be opened to kitchen/family room. I would also make the bar a walk-in linen cupboard.
