Designing a kitchen for pest prevention & ease of cleaning

Suppose I wanted to design my kitchen primarily for ease of cleaning and prevention of pests (cockroaches etc) from the get-go. If I were to forsake aesthetics and go for an extremely practical, easy-to-clean, low-pest kitchen design, what sort of things would you do?
I am guessing folks who have worked in commercial kitchens for instance might have some thoughts on this - I notice they seem to use a lot of stainless steel benches with little storage underneath...although I'm not sure whether this is for cleaning/pest for or other reasons..?
