You should also consider thermal efficiency and your views. Even double-glazed windows transmit heat. Your house doesn't seem to have many eaves. If you have the taller windows on your side facing walls will it mean you just get a better view of the neighbours roof and your side fence? Will they get a better view into your side facing windows? Don't just consider how it looks from the inside, but think about the whole house from the outside as well - including views, privacy, and extra heat gain in summer, and heat loss in winter, plus all of those extra window furnishings. If you are getting custom made window furnishings then there will be extra cost in materials and labour. You can have what ever ceiling height you can afford. But also think of what height windows, internal and external doors will be. What heating and cooling system you will install. What window treatments will be required for extra height windows, etc etc. Our double storey home has 2700mm ceilings throughout with 2400 doors and windows. This height is ideal. A gable ceiling in the living and dining areas, I think, has more character than a 5 metre ceiling in one room. Have 2700 ceilings throughout the remainder of home. Depends on the aesthetic you are going for, to what the design could be.

If you are referring to the plan posted on another discussion, you only have three windows on the facade, so it would not be a big design choice. I personally prefer 2430mm doors and windows with 2700mm ceilings, and standard height window and doors for upstairs 2500mm ceilings. But every increase to window and door height costs more money, so it goes back to budget.
