Of course, it’s always best to get sample pots and try your selections where you will be using them...need to see them in all lighting and in combination with each other. You may want to speak with a colour consultant at a good paint shop; they are very knowledgeable and helpful. Also, lots of great articles on Houzz. Melamine describes the surface finish, not the core of the board. Most 3mm thick boards at Bunnings are MDF (medium-density fibreboard) which is not water-resistant. When MDF gets wet it swells and falls apart so is not stable for places that may get wet, which is why there shouldn't be MDF skirting boards in bathrooms, especially near a shower recess. However, if your 3mm thick panel is not MDF based its success (or failure) will depend on what material it is actually made from. Your problem will be sealing any joints, like where it meets the benchtop and vertical corners. In addition, you may also have penetrations for powerpoints and taps which will also have to be properly sealed. Near a stove, you may have steam that gets behind and starts problems. The photos aren't the greatest , but the first thing I noticed is the ( I presume ) timber around the top . You probably spent mega $$$ on the benchtop , but it doesn't stand out to me . I'd personally try for a black/charcoal based splashback , with white and grey veins -- either one piece or tiles . The other option for me would be a slightly orange tinged brown stone tile , again with 'veins' , with white grout -- that is assuming you are keeping the wood substantially as it is , it would tie in .

If you're up for the cost of removing and installing a new splashback and it's bothering you that much, I'd definitely go with white... if you are wanting to do it in glass I would also highly recommend that you request Extra Clear, as it looks like this may actually be a white splashback but done on standard clear glass which casts that green tinge (this is one of the first things I confirm with my clients when we're designing their kitchen and they request glass splashbacks - darker colours it's okay to use standard glass, but any lighter colour always request the extra clear finish). To take it one step further, take a sample of your door colour so that you are getting the same white already used in your kitchen (they use RGB colour codes as it is painted).
