Hi Louise :) Apart from the kitchen location, we've actually kept fairly close to the original idea! The only change is that the back will now be big glass stacker doors (as mentioned above) the same as at the front. We can open the whole room up to the outside, front and back. The whole first floor will all be pretty much open plan so we've decided not to worry where the door to the laundry & bathroom is. The dining table will be up against a wide window with a built-in bench seat, to save room and allow a wider pathway to the kitchen. The kitchen looks straight into the dining area, it's all open. So when I'm standing in my new kitchen I'll be able to see out to the back garden, all the way through the house, and see the spa area too. I can't wait :)

I would suggest looking at a few, getting an idea of the type of blinds you are after, doing a cost comparison between them all. You might want to request an obligation free quote. Of course, depending on your location, some may be more suitable than others. Have you already sourced your tiles? I would expect most tile stores could help you find the edging tiles which I think are typically termed 'pencil' tiles for the style you have shown. We used bevelled subway tiles in our DIY ensuite. In hindsight we would have aimed to finish the brick pattern with 1/3 and 2/3 sized tiles (like in your pic 1) rather than full and 1/2 (pic2 and 3) to give a more even edge thickness/profile... Might not suit and we didn't use capping tile (I lost that arguement!) so it is probably more obvious in our bathroom, but just something you might like to consider.

Thank you all for your comments, suggestions, drawings and photos, I really appreciate the effort you all put in to help others on this great platform. I have come up with another idea (see photos below) that involves putting the fridge on the back wall of the kitchen behind cabinetry doors (yes, I know I was adamantly against this!) and bringing the door of the pantry forward to be in line with the front of the fridge. The pantry door would also be cabinetry and the section of wall. I don’t really know how to explain this, but the wall the kitchen backs on to would be bulk headed out so it continues in line with the pantry/fridge front all the way to the ceiling. This creates a sort of symmetry in the doors of the fridge and pantry being either side of the cooktop, but without the worry of having to line the rangehood up with the apex of the cathedral ceiling....I think. What do you think? P.S. Please excuse my shoddy hand drawn sketches.
