Hydrangea should do fine in NJ. There are more varieties that work in warmer climates than here in Southern Ontario. You can grow white hydrangeas just about anywhere, but today get blue, you need acid soils, so planting under Pine or spruce trees helps. You can also add sulphur to the soil to increase acidity. Check with your local nursery for the best varieties in your area and the best products to get the blue colours, if that is what you are looking for. Be sure you are dealing with a Member of the New Jersey Nursery and Landscape association for best results.
