Hotwater - Solar versus gas

Whilst obtaining quotes for solar power, we have received conflicting advice regarding our hot water system. Do we get solar hot water or stay with gas (and convert to instant as part of our reno)? We are a family of 5, with young children and I stay at home. The bulk of our hot water requirements are for evening showers. We also have family stay a few time throughout the year. Whilst I would like to go with the environmentally friendly solar I'm concerned that if/when it can't meet our needs how much does it draw on our solar electricity to boost hot water? There is also the issue of positioning the storage tank/s as roof mounted tanks would be too far from wet areas & kitchen .
