Sound Absorption in Double-Height Space

Hello!
We're about to undertake a big extension/reno on our little worker's cottage. Second stage of plans have been delivered and we've got a brilliant double-height kitchen (concrete floor) adjacent to a sunken lounge (carpeted), with master bedroom upstairs, accessed by a walkway.
It will be beautiful, but as someone with hearing loss who wears aids I'm freaking out about reverberation in the space. Obviously our rugs and a wall of bookcases will help dampen the sound somewhat, but I'm interested to know if anyone's used commercially-available products in residential products with success (like wall tiles/treatments, ply, ceiling baffles for eg). Below are some examples that are readily available.
The height is crucial to the overall design, but if I can't bear to be in the space due to the noise it's going to be a very expensive mistake.
Any advice or suggestions greatly appreciated!
