The faucet is from Riobel from the Venti line, the shower trim is also Riobel, but from their Altitude collection. :)

Is there a problem with water spilling into the bathroom with no barrier in the shower?

Personal preference would be the main reason; but the wall mount taps also allow the basin and benchtop to be clear, giving a more streamlined look. Also the wall mount don't get that wet, soapy build-up around the base that the basin mounted taps can.

The tiles are not offensive..most people are choosing white with white anyway. Given the items you want to keep I would simply replace the bench top, add a new wider longer mirror, that fills the space where you currently have the tiles and if you are using laminate it can only be an above mount sink. If you are doing stone or timber then you can have an undercount sink. I would possibly consider taking off all the wall tiles and find a more natural tile to work with your floors and then add a lick of paint to freshen it all.

I have a power point on the wall above the vanity and between it and the bath but I don't plan to have anything plugged in permanently or ready to use even though I could, as I have a hob at the end of the bath which is over 700mm wide so the bath water is quite a distance from the powerpoint. There appeared to be no issues with putting it where I did but to my knowledge plenty of bathrooms have a powerpoint beside the vanity but based on your layout, I would at least put it on the shower side assuming you have a screen there.

The glass guard and positioning of the shower head in integral in the functionality of a shower without a door, so no there is not.
