Filling Gaps in Timber Wall Panels

I've been researching my options to improve the look of this wall panelling (on a shoestring budget). I've read you can fill in the gaps with builders compound and (after a lot of time and effort) end up with a smooth surface ready for painting. Has anyone done this??? Did it work well? Believe me, if money was no option I would put new vj over it!
